Quinoa Black Bean Salad
This is one of the healthy and delicious dishes I made for our 4th of July party this weekend. Everybody loved it and so will you!
Ingredients:
1 cup quinoa
1 can organic black beans
1 cup organic corn or 1 fresh corn of cobb
1 red/yellow or orange bell pepper
1 bunch of cilantro
15 cherry tomatoes or whatever tomatoes are in season
1 clove garlic (optional)
1/4 of a red onion (optional)
Celtic sea salt or other quality salt to taste
2 tablespoons of high quality olive oil
Directions:
1. Make quinoa (in rice cooker) or boil 2 cups water, add 1 cup quinoa, cover and simmer for 20 minutes.
2. Chop all vegetable ingredients.
3. Stir vegetables and black beans into quinoa add salt and olive oil.
4. Bless and enjoy!
