Easy Quinoa Cirtus Salad

Here’s a light and easy meal for dinner or for lunch and one of the favorites in my 30 Day Whole Body and Mind Cleanse (kicks off June 8th.) Enjoy!
1 cup quinoa
2 cups water
2 navel oranges or 1 can mandarin oranges
Boil water and add quinoa. Cook for approximately 20 minutes or until all water is absorbed. In the meantime cut skin off of orange and slice into wedges. Place quinoa in a serving bowl, add orange wedges.
Mix together dressing and pour over quinoa mixture.
Easy, delicious and nutritious!
